Pork Souvlaki

Enjoying a crisp bite of grilled meat with your favorite drink on an evening really does wonders to the mood. Grilled Pork Souvlaki is one of the few recipes that are easy to cook and have a terrific taste, good enough to make somebody’s day. Been said that, making this food is really easy but you have to give some time to prepare it. It takes only 2 to 4 hours to prepare it and another 20 to 25 minutes to be cooked and ready to enjoy.

The ingredients:
One Onion (minced or paste).
Black pepper (freshly grounded) and salt.
One tablespoon of dried oregano.
Garlic (about 4 cloves, minced or paste).
Olive oil (1/4 th of a cup).
Red wine(1/4 th of a cup).
Lemon juice about 2 tablespoons.
One tablespoon mint.
A pound of pork shoulder (no fat, and cut to small cubes of an inch each).
Some Lemon slices or tzatziki sauce and pita bread for servings.

Preparation:
This takes about 2 to 4 hours maximum.

Marinate: Mix everything in a non-metallic large air tight bowl (you can also use plastic wrap to cover) and make sure that the ingredients are mixed evenly all throughout the mixture. Put the pork shoulder cubes in and make sure that you cover each piece with the marinade.

Cover the bowl with plastic or just put on the air tight cover and put inside refrigerator for a good 2 to 4 hours. Remember the longer the time taken to marinate it, the more flavor gets inside the meat but do not do it more than 4 hours.

Grill preheat: Preheat your grill with all the burners on “high” setting for about 15 minutes.

Prepare it: Take the bowl out of the refrigerator and thread the pork cubes onto the skewers, about six to seven pieces per skewer. If you want to use wooden skewers, make sure that you soak them first in water for about 10-20 minutes. After skewing, put your grill to medium heat and put the skewers in.

Turn them on their side once every three minutes until all the sides are crispy brown. Make sure that you do not burn them. The total cooking procedure will take anywhere between 10 to 15 minutes and not more.

Serve: Remove from grill and cool it down for 10 minutes. Serve with lemons or with pita bread and tzatziki sauce with which it tastes best.
